A Legacy of Excellence – Our Story
Our story begins in 1972, when hospitality training pioneer Russell Steabben, after years of teaching at William Angliss Institute, helped develop one of Australia’s first bartending courses. Alongside his wife Gillian, they shared a passion for hands-on, practical training that reflected real industry conditions, a philosophy that still defines us today.
By 1985, they founded the Australian Catering Academy, where students didn’t just learn hospitality theory, they poured real beer, mixed real cocktails and mastered silver service through live practice. In 1989, they acquired the iconic Victorian Bar School, cementing their place at the heart of Melbourne’s hospitality scene.
In 1994, Complete Hospitality Training was officially born, combining a passion for service with a vision to deliver the highest quality, industry-relevant training.
Today, we remain a family-owned organisation committed to delivering hands-on, practical training across Australia and internationally, helping thousands of individuals and businesses succeed in the vibrant world of hospitality.
